Loaded with big flavours of onions, ginger, garlic and spices together with creamy roasted eggplant
Cut the eggplant bottom into criss cross like it is shown in the above video. Tips: Don't cut the eggplant into half else the eggplant will melt in the gravy.
In a frying pan pour some oil and put the eggplant into it. Make sure you fry all the sides of the eggplant by properly. Cover the pan for 2 min so that the eggplant gets to cook well.
Now in a another frying pan, pour some oil. Add 2pc of cardamom and 2pc of bay leaf. Add 1tbsp of cumin seeds, followed by chopped onions. Saute it well till the onions turns into golden brown.
Add 1tbsp of garlic paste and 1tbsp of ginger paste. Add 1 cup of finely chopped tomato, 1tbsp of turmeric poweder, 1 tbsp of salt and 1tbsp of chilli powder. Add some water and let it cook for 2 min.
In that gravy, add some chopped coconut in it. Later add all the previously fried eggplant in it and cover with lid for 5 min. Saute the recipe for another 3 min. Keep it aside for sometime and recipe is ready to be served.
