Ingredients
- 1.2 kg of fresh mutton, chopped into medium-sized pieces.
- Garlic paste.
- Ginger paste
- A pinch of salt.
- 200 grams of yogurt.
- 100 grams of mustard oil.
- 2 bay leaves.
- 3-4 cardemon.
- 7-8 pieces of cloves.
- 2 medium-sized chopped onions.
- 4-5 pieces of cinnamon.
- 2 mace/Joyitri.
- Turmeric powder.
- Red chilli powder.
Step-by-step process of cooking mutton kosha
- In a bowl, add the mutton pieces.
- Then add 4 tablespoons of garlic paste, along with 4 tablespoons of ginger paste.
- Add a pinch of salt to taste.
- Then add 200 grams of yogurt, followed by 50 grams of mustard oil.
- Mix the mutton properly and keep it aside for 30 minutes to 1 hour for marination.
- Then, in a frying pan, add 150 grams of mustard oil.
- Then add the bayleaf, cardemom, cloves, cinnamon, and mace/Joyitri and mix it well.
- Later, add chopped onions and fry for 2–3 minutes, till they are golden brown.
- Add the marinated mutton and mix it for 4-5 minutes.
- Cover the pan with a lid for 5-8 minutes to cook the mutton properly.
- Later, add 2 tablespoons of turmeric powder, followed by 2 tablespoons of red chilli powder.
- Mix it properly, and again cover with a lid for 5–6 minutes.
- Once the mutton starts releasing water, cook for another 5 minutes.
- Serve the dish with rice or pulao and enjoy the dish.
