Ingredients
- Take one medium-sized brinjal and cut it into cube shapes.
- 30g of mastard oil.
- 1 tomato, cut into slices.
- 3–4 green chillies.
- Two medium-sized potatoes are cut into cubes.
- 1 tablespoon of turmeric powder.
- 1 tablespoon of salt.
- 1 medium glass of water.
Step-by-step Preparation of Begun Aloor Torkari
- In a frying pan, add some mustard oil and heat it.
- Then add chopped tomatoes and toss with green chilies.
- Add one tablespoon of turmeric powder and one tablespoon of salt, and sauté it well.
- Then add chopped potatoes and fry for 2-3 minutes till they are golden brown.
- Then add the chopped brinjal and cook for 2–3 minutes.
- In order to cook the potato and brinjal properly, cover with a lid for 5 minutes.
- Add one glass of water to make some gravy so that it can be served with roti or paratha.
- Then cook till some of the water is dried up and reduce the flame.
- Put it on a dish plate and sprinkle some coriander leaves on top for garnishing.
